Medium Shred coconut is a more granular, coarser cut of coconut and is used largely in a desiccated (drier) form throughout the confectionary and baking industries. Medium Shred coconut is used in a sweetened and desiccated (dried and unsweetened) form. It is selected when a heavier, chewier consistency is desired in the finished product.
