Flakes are produced in large sheets that are then randomly broken into smaller pieces. These pieces are then screened for appropriate sizing. Our flakes and barks are low-melt, which means the flake is formulated to stay hard in ice cream but melt in your mouth. We also can formulate for ambient applications.
